Itinerary

After clearing immigration and customs formalities, our guide will meet the group with a welcome signboard and transfer to the hotel to relax. On the way to the hotel, enjoy an orientation tour of the city through the French colonial quarter, the Administrative quarter, the West Lake. Evening, our guide will meet the group again at the hotel to brief the entire Vietnam culinary itinerary and cuisine culture. Welcome dinner at deluxe Vietnamese restaurant, the Wild Rice where a menu is typical of Northern cuisine, a dinner introduction of the Vietnamese cuisine. Your guide to join the dinner with the group to brief about the Northern culture, cuisine and even how to use chopsticks

Today, we will have Pho noodles for breakfast, a specialty of Hanoi followed by an interesting walk through the Old Quarter to enjoy the local vibrant daily life and you might encounter some interesting food street stalls and the small market. Opportunity to learn different aspects of cuisine culture on the way. Then enjoy a visit to the Museum of Ethnology to enhance your understanding of Vietnam's diverse cultures through its unique presentation of daily life objects and dress. Continue to an ancient Pagoda and a vegetarian lunch here will be shared with some of the Vietnamese nuns at this pagoda. Chance to interact with them to see how they prepare the food and also to learn something about the life as a nun. After lunch, we will visit the Temple of Literature and the Fine Arts Museum. End your trip at the Thang Long Theatre for a special Water Puppets performance, interaction with the puppeteers after the performance. Dinner at a local specialty restaurant

After breakfast, meet with a famed local chef of Hanoi. This 60-year-old lady has inherited a special cooking skill from her mother who used to be the chef of the French Ambassador to Hanoi in the 1950s. Embark on an interesting market tour with the chef at a local market to enjoy the bustling atmosphere of local daily life at Hang Be market, opportunities to learn how to choose the fresh ingredients. After buying the goods, be taken to her own cooking venue for a private cooking demonstration. Lunch with what you have prepared. Drive 3.5 hour to Halong City, upon arrival, get a “water taxi” to the junk (shared junk) and board for overnight.

Morning board our private junk to begin a 4-hour cruise through spectacular Halong Bay with a visit to a few stunning caves and grottoes, while enjoying a fresh seafood lunch served on board. After lunch, head back to Hanoi stopping off en route at Phu Lang village, for an opportunity to see how the local people have preserved their traditional craft over generations. Evening dinner is at Wild Lotus restaurant

Morning transfer to Noi Bai (Hanoi) airport, and flight to Hue, the former Royal capital, where the Nguyen Dynasty ruled Vietnam during the period 1802-1945. . Upon arrival, transfer to the hotel. Begin sightseeing in Hue by taking a dragon boat on the majestic Huong (Perfume) river. Upon arrival at Thien Mu Pagoda, Hue’s most preserved religious monument, visit the octagonal tower and interact with the monks about their life and experiences, and growing rice and vegetables at the pagoda. After this visit, transfer by road to the home of historian, Mr. Phan Thuan An (formerly the home of the princess of the Emperor Dong Khanh), where his wife, Mrs. Van, a celebrated Hue chef will present a cooking class/demonstration of Hue specialties. After lunch, visit the Imperial Citadel and the Royal Relics museum. Continue to a nice local restaurant to experience other Hue specialties such as Banh Beo, Banh Loc, Banh Nam and Chao Tom. We end the day with a walking tour through the colourful Dong Ba Market to learn about all kind of Hue recipes and ingredients. Enjoy a magnificent Royal dance at the former exclusive Royal theatre for the King’s family. Evening royal dinner is at a local restaurant.

Today, we continue to visit the most elaborate mausoleums of Emperors Tu Duc and Khai Dinh with a stop at the Minh Tu pagoda orphanage to interact with the nun Minh Tu, and to learn about how she set up her orphanage and to meet with the orphans and learn about their life there. Lunch is at a restored Royal home with Royal Cuisine. After lunch, depart from Hue to Hoi An Ancient Town (3 ½-hour drive). We make a stop at the Lang Co fishing village located on a sand dune line for a photo opportunity. We continue the scenic drive over the Hai Van (Ocean Clouds) Pass, the summit of which presents a spectacular panoramic view of the central coastline. Upon arrival in Hoi An, check in to hotel and relax. Dinner is at Full Moon restaurant featuring a mixture of Central and Chinese cuisines

This morning, experience the lives and work of the local people in the rural outskirts of Hoi An. Morning, enjoy an interesting trip to Tra Que market garden village. Strolling around the vegetable plots and join the farmers in preparing the land and fertilizing it with seaweed from the local lake. Learning how to cultivating the vegetable by raking, sowing, watering greens and picking greens and other fun gardening activities. Home hosted lunch with the local family with many local delicacies including “Tam Huu” spring roll made from Tra Que vegetable. Back to the town and enjoy a walking tour of Hoi An including the 400-year-old Japanese Covered Bridge, the Assembly Hall of the Cantonese Chinese Congregation founded in 1786 (the Phuc Kien Pagoda), Tan Ky House built almost 200 years ago, and the central market to have an overview about food and ingredients in Hoi An. Dinner is at the charming Brothers Café restaurant.

After breakfast, transfer to the airport in Danang for morning flight to Saigon. Upon arrival, transfer straight to a local home for a private cooking class of typical Vietnamese dishes; enjoy the wonderful demonstration, and then enjoy it the results for lunch. This cooking class truly presents the diversity of typical Southern cuisine. Check in to your hotel and relax. Enjoy a leisurely walk to visit some highlights of the city with its French colonial architecture, funky cafes and boutiques. Photo opportunities abound at the Old Saigon Post Office, Notre Dame Cathedral etc. Remainder of the afternoon is free to go shopping or amble around. Dinner with a variety of authentic southern dishes is at the local Ngon (Tasty) restaurant, which has a rural village atmosphere.

After an early breakfast, depart on an excursion to Mytho, gateway to the Mekong Delta. Enjoy a 2-hour scenic drive passing paddy fields and tributaries. On arrival, board our private motorized boat for a river cruise on the upper part of the Mekong River for a taste of agriculture life on the mighty Mekong River visiting a fish-raising village then entering Vam Xep canal with its beautiful scenery of water palm. Disembark and stroll around Quoi An fruit orchard, visiting fruit-drying kilns and a coconut craftware home. Enhance your trip with a short horse-drawn cart ride along the village road. Upon arrival at Ben Truc – Phong Phu garden, sample some fresh seasonal Mekong delta fruit whilst enjoying local traditional music, and an opportunity to interact with the local people who live on and around the river. Complete your trip with a rowing-boat ride to explore the water palm canals. Reboard the main boat and transfer back to Mytho. Arrive at the dock and lunch at Mekong Rest Stop restaurant with great Mekong specialties. Drive back to Saigon and drop off at your hotel. Farewell dinner tonight is at the antique-style Mandarin restaurant with its wonderful cuisine.
